Bourbon Cookie Cocktail: Cookies and Cream for Grownups
Having found some butterscotch liqueur at the back of my cupboard not so long ago I thought I’d see what other yummy cocktail treats I could mix up with it. This time I fancied something with bourbon as the base.
Consulting my trusty cocktail app, I found a creamy little number called the Bourbon Cookie. The original recipe called for a double measure of bourbon, half a measure of butterscotch, a single measure of half-and-half, and half a measure of passionfruit syrup.
As delicious as this cocktail sounded, there were two immediate problems with it. The first was I didn’t have any half-and-half, the second was the distinct lack of passionfruit syrup. My solution: use milk and squirty cream in place of the half-and-half and swap out the passionfruit syrup with some Passoa.
A little bit of adjustment of the measures to suit my pallet and allow for the substitutions and I had the perfect cocktail that tasted rather like a grown up chocolate cookie with a naughty kick of bourbon.

BOURBON COOKIE COCKTAIL RECIPE
INGREDIENTS
2 measures bourbon
⅔ measure butterscotch liqueur
½ measure milk
1 measure Passoa
generous squirt of cream
METHOD
Pour ingredients into an ice filled cocktail shaker and shake it vigorously. Strain into a chilled cocktail glass and garnish with a good dusting of cocoa powder.
